  • Just like a fine wine, when chocolate is pure and unadulterated can you truly appreciate the rich and bright notes of all the varieties. This store is "bean-to-bar" -- meaning the entire chocolate-making process is performed here so this is likely some of the PUREST chocolate you will EVER have in your life. Raw beans are brought in from around the world. Then they sort, roast, crack, winnow, grind, conch, age, melt, temper, mold, and finally, package the chocolate ready for your enjoyment. We had the pleasure of experiencing the Hexx chocolate education & tasting class. It was held at the bar in the kitchen at the back of the store. Took 15 minutes and we sampled each of the 10 single-origin batches. THIS IS NATURAL CHOCOLATE AND THERE ARE NO ARTIFICIAL ADDITIVES! Quite amazing how the offering from each country was so distinct. Get the Groupon if you can, it is a great deal for ~$25/couple and it also includes 2 bars of your choice flavor per person to take home. TIP: Request a free ice pack for your chocolate bars if it's a hot day! My personal favorites were from: ECUADOR = the top seller with hints of of marzipan and caramel PERU = notes of caramel, vanilla, and fruit Location is along The Strip in front of Paris hotel. Great outdoor patio for people-watching and a glimpse of the Bellagio fountain!
