When I was in the area today, I remembered reading the favorable reviews for Cugino's. It is a cute Italian deli with self order counter, large selection of bottled beverages, grocery items and deli meats/cheeses. I eagerly ordered the Eggplant Parm Sandwich and oh, so disappointed! I was expecting so much more from the great reviews.
First of all, I believe the joy in eating eggplant parm is that creamy texture of the eggplant and the crispy fried breading. Both fell short. The eggplant was sliced so thin that there was no texture expect for the stringy skin and the the breading soggy like it had been fried and left sitting. Come on now, the pictures for the deli sandwiches were nice and meaty. Eggplant is a lot cheaper than deli meat! For $8 I was expecting a better looking and tasting sandwich, I left there hungry!
The sandwich had 3 limpy strips of eggplant with some marinara only on the top with cheese served with two pepperoncini's on the side. I also thought it was odd that the eggplant was cut into long strips? Why not preserve the natural oval shape of the eggplant and be generous with your eggplant, let it hang out of the bread a little. At least your customers would perceive it to be a better value by their first impression.
By the looks of the reviews and what was coming out of the kitchen, pizza must be there top seller. I will never know. This isn't a place I'd drive from Summerlin to try again.
