| - I've had some phenomenal cocktails at Olives in the past, but this was my first time dining there, and it did not disappoint! We had a 12 o'clock OpenTable reservation and were lucky enough to snag the last patio table with an up close and personal view of the Bellagio fountains. Those fountains are LOUD when they go off, and the temperature on the patio easily drops ten degrees - such a fantastic show. We started off with a rosemary manhattan each - I didn't really taste the rosemary much, but overall a solid cocktail made with Maker's Mark. The freshly baked focaccia and olive tapenade were also solid and a great start to the meal. I had the famous Todd English beef carpaccio. The brick of polenta hiding underneath the mound of beef wasn't my favorite, but the combo of the tender beef, baby arugula, shaved parmesan, balsamic reduction and scallion creme were spectacular. I would come back for this dish alone. The pear and beet salad was also very good. I love that they use lolla rosa instead of the usual romaine, though the salad was a little overdressed. I didn't have any of my coworker's fig and prosciutto flatbread, but he raved about it. Unfortunately we were way too full for dessert, but hopefully I make it back before Olives closes its doors to get another taste.
