  • While in Phoenix this spring I visited one of their many farmer's markets, and saw that there was someone making fresh handmade sausage. Rare to see, and always exciting! Bought a few different things to bring home with me from The Proper Beast, and everything was delicious! I had one of the smoked brats at the market, and it was absolutely fantastic. Nice smokiness, but not so much as to overpower the other flavors. Obviously I had to get some of the smoked brats...and the beer brats...and the Mexican Chorizo...the Italian Heat sausage...oh and some of that really good ciabatta bread. Why I didn't try one of their pretzels, I'll never know. Both the smoked and beer brats got grilled, according to their directions, and were perfect. I had no idea we've been grilling our sausages wrong! What I loved most about these sausages, these guys aren't afraid of flavor, but keep it well balanced! The Italian Heat sausage went into a recipe of pappardelle with spicy sausage and mixed wild mushrooms, and was really great. Enough heat in the sausage so there was no need to add the red pepper the recipe called for. And whatever the spices and herbs they use, were a perfect compliment. The Mexican Chorizo was used to make stuffed poblano peppers, so good! Again, enough flavor that it was all the recipe needed for the black beans, rice, and jack cheese to come together to make such a tasty stuffed pepper! Okay, the bread is so good I could eat it constantly, and would if it weren't 2600 miles away. My favorite way to use it is was as a breakfast sandwich bread, perfect. I love the idea of using it as a stuffing bread, and if you're in the Phoenix area, please do it, for those of us that can't! So yes, all of it was really really outstanding. And my favorite thing of all, and the reason I was happy to buy it in the first place, is that the ingredients are all locally sourced. Thank you so much Proper Beast for supporting your local farmers! Next time I'm in Phoenix, I'll be stocking up on more, and definitely trying one of those pretzels.
