  • I drive by this place almost every day and have been waiting patiently for it to open! Glad it did not disappoint as we will come here often. The parking is a bit tricky as the lot fills up but on the weekend I was able to find a spot across the street in the medical facility's parking lot. The wait was long and lucky for us they are on No Wait. At 3 pm on a Saturday it was a 70 minute wait! It was a beautiful day in January so we headed to the upstairs bar (much less crowded) and hung out on the rooftop deck. Mindful has a nice selection of their own beers but also lots of other local brews as well as a decent selection of bottles so you can grab a six pack to go. I think Tuesday through Thursday during happy hour you get a six pack for the price of 4 beers and then $1 for the each of the last two. That is a pretty good deal. I tried the Mindful brew of the Agave Lime Wheat. It was so tasty and a craft version of Budlight Lime-one of my favorites. We were finally seated and the service was great. It did take a while for our food to get out but it was so busy and only their first week open. The menu is fantastic with tons of items to choose from. We started out with pierogies (a bit bland), homemade guacamole with chips, and the hummus with veggies. Their homemade chips are really fantastic and I want to order the nachos next time. I then ordered the burger with sharp cheese and apple sticks. It came on a delicious brioche bun with a side salad. I love how the side is defaulted to a salad and if you want you could substitute for no extra charge either fries or the homemade chips. We had a great dinner and can't wait to go back.
