| - I have, and shall always be, a fan of French cooking. It is my favorite kind of cooking...which is bad due to it basically being simple; take food, add butter, simmer and serve.
I kid, I kid.
But in all honesty, Thomas Keller is probably the best chef in the US. His restaurants are fantastic, but Bouchon left me feeling slightly wanting. Went for lunch. Service was great, our waitress was hilarious and down to Earth (not at all what I expected, and certainly not a complaint, she was great.) Coffee was decent, but I had to try the place for the croissant, which was exceptional.
However, I got a croque madame...which is my favorite 'regular dish' that the French have to offer. Theirs was entirely adequate...which is not the words I would have wanted to describe from a Thomas Keller joint. I honestly believe the best I've ever had was in Cincinnati, OH...they offer theirs with truffle fries too.
I mean, everything was cool, but that dish was in no way memorable. Darn.
