Art of Flavors is a completely apt name for this gelato cafe. The chef/owner will walk you through each flavor and give you a glimpse as to the method to his madness. Each flavor is carefully dissected in terms of ingredients and the owner will try to guide you to a flavor that fits your profile. The best part is all the unique flavors at this cafe make it seem like you're being lead through an art gallery and each work (scoop/flavor) is different and special and must be appreciated.
I thought some of the flavors of the day which included Steak and Eggs and Cafe de Giorno were particularly interesting to taste. The Steak and Eggs tasted more like eggs mixed with A-1 sauce but though it was savory, it still had a slight sweetness to it.
Ultimately we settled on more traditional flavors but they were equally as vibrant and with an exoticness that you don't find at many other gelato places.
I'm a stickler for texture in gelato or ice cream and I thought Art of Flavors has some of the more creamier gelato you'll find in Vegas. There was a tinge of iciness but nothing to derail a great scoop of ice cream.
This is easily one of the best gelato spots in Vegas and made doubly special by the fact that it is the neighbor to Viva Las Arepas. Two gems right next to each other like an Infinity Gauntlet.
Note: the chef really wanted to know what flavors make Chinese people tick. I went with lychee but he seemed adamant about wanting to find the right flavor to meet that consumer base. If you visit, please let him know!
