I ordered smoked salmon. The piece I was given had a vein of white, connective tissue. I asked the waiter to take it back and give me a more edible piece. He smile and said he would, then returned the same piece, with the white vein inverted so I couldn't see it. When I ate it, I gagged and had to spit it out. I was deceived, my request ignored. Bouchon is too pricey a restaurant to treat the public like fools.
