Normally, I don't put a lot of thought into the service I receive. Take my order, bring my food, and drop off/pick up check. My main concern is always the food. Good enough to come back or nah? I had great food and service during my first visit to Paco's. The food came out fast and my waitress was really nice and helpful. Can't remember her name because of course I was only focused on the food at the time. We began with the smoked bacon wrapped jalapenos. I think there was cheese inside but I was focused on the bacon, which was nice and crispy and definitely not undercooked or burnt. I had the enchilada sampler which was good overall. My least fav was the roasted veggie enchilada. There was cinnamon-y or something flavor that was just weird and the black bean sauce over top made it look unappealing. I ordered the Texas mule to drink which was pretty tasty but I should have gone with a margarita. My companions had the outlaw steak fajitas and the ambushed shrimp. I tried the shrimp and it was really good but honestly anything wrapped in bacon is gonna be dynamite. I left Paco's stuffed and planning a return visit. Yum!!
