| - After living in Lima, Peru for two years, I can assure readers that this restaurant is absolutely authentic in every way, and that is not easy to replicate. In short, the cuisine is amazing, and the taste takes me back to Lima on a Sunday afternoon with family and friends. I have tried the ceviche, the pescado a la chorillana and the pisco sour, and all were an absolute 10. The ceviche is served with real Peruvian corn called "choclo" versus other Peruvian restaurants which use yellow sweet corn as a cheap and quick replacement. Critical ingredients that are known to only those who venture to Peru or who look really, really hard here in the US include Rocoto peppers, Aji Panca peppers, Ajilimo peppers, Peruvian Corn "Choclo" among others. It is these ingredients which give Peruvian food its unique taste, and this restaurant does not cut corners like others do. It is about time that North Scottsdale ventures beyond its standard American and fake ethnic chain restaurants. Inca's is amazing. Everyone must give it a try!
