While we waited for our food, the bartender, Jason improvised drinks based on our likes. I'd say things like \"something that tastes like autumn in a cup\" and he'd craft something magical, one drink after another. Jason was the type of guy that would carry a sprig of rosemary in his apron pocket in case of emergencies. It was great. Then came the food! The bison tartare with roasted cipollini onions, lemongrass aioli, and bonito flakes was out-of-this-world. I think it might be my new response to if I had one more meal left on earth, what would I eat. The lamb ragout poutine was also incredible - elevated the Montreal favorite to a new level. I was already full, but why stop there when you're enjoying each dish so much. Seeing as the restaurant has meat in its windows, we opted for a New York steak.
