The base is a thick, rich, creamy potato and soy milk soup. Tofu nuggets and a variety of vegetables (corn, spinach, pickled beets, yam, mushrooms) round it out and make it a much more filling and flavourful meal than expected. I couldn't have this regularly but if I need a warm comforting hug of a lunch, it's a great option.
