The gravy and fries are good, but no matter how hot they are, they can't melt the straight-from-the-fridge curds. Surely Quebecers eat melted curds safely..but how? HOW?\n\nUPDATE: I've done the leg work for you, dear Yelp readers. I have confirmed with the canteen manager that the curds are purposefully not supposed to melt at Costco. Riiiiight. Despite this, I have slowly and surely devised a system to achieve acceptably soft curd action here. 1) Ask for a fresh batch of fries to be made 2) Ensure that they leave the curds out while the fries cook 3) Ask that they put the cheese in the middle of the fries 4) Optionally ask for a second container, to form a lid on the poutine for heat retention. This may sound like you're being a pain in the butt, but they know their standard protocol is a travesty, and are quite willing to customize upon request in the name of The Almighty Melty Cheese."^^ .
