I needed it ASAP, because it takes 3-4 days to cure, and I sorely underestimated the availability of the pork cut I needed. The Meat Shop even offered and sold me the pink curing salt I needed. \n\nIN SUMMARY: I couldn't have pulled off such a total birthday success without the The Meat Shop's generous help on short notice.
