. "0"^^ . "Monta probably deserves a good rating by default just for the novelty of having a kurume ramen spot in Las Vegas, but it's also a very good one. Kurume style ramen is a product of Fukuoka prefecture, so there are many similarities to other Fukuoka styles like Hakata, such as the thin, dense noodles (think Ippudo) - but a defining characteristic of Kurume is that the tonkotsu tends to be less oily/fatty than Hakata tonokotsu. Kurume style is still creamy and rich, but the mouth feel of less oil/fat allows for more of the meat flavor to come through. Monta definitely gets this right.\n\nUnfortunately, Monta is a small shop and quite popular, so it's often busy and crowded. Even on weekdays I'll often find that there's a line by noon - so I'd definitely get there right at opening if you don't want to wait (as long).\n\nNow if only the owners/management can get their act together and relocate Monta Chaya (and keep us updated about it), if nothing else than to reduce the crowds at this Monta..."^^ .
