"Lately I have been eating less meat and have been wanting to find a great meatless restaurant with great food that I could try because to be honest I'm still trying to navigate through my meatless options.\n**suggestions welcomed:D**\n\nHanging with my brother-in-law today and we were driving around the area trying to figure out what to have for lunch. He recommended that we try VEGEnation. \n\nVEGEnation is a little restaurant on the corner of Eastern and Sienna Heights. The decor is simple, cute and fresh with indoor and outdoor seating. We were greeted right away and seated. Ashley was our waitress, she was sweet and took our drink orders offering lemonade, teas, etc. I opted for water and my brother-in-law got the Fair Trade Organic Peru coffee (which btw you get a whole pot that serves about 3 cups). Our waitress came back with drinks and asked if we were ready to order. We asked for a few more minutes and told us to take our time. She was informative about specials (Thursday's is Chimichanga) and also customer favorites. \n\nI love how the menu has a little bit of everything. From dumplings to tamales for appetizers, salads, Burgers, Pizza to Curry! There is definitely something for everyone on the menu.\n\nSo we decided to order an appetizer, The Buffalo Cauliflower Wings [Roasted Cauliflower tossed in Buffalo sauce, served with celery sticks and their delicious house made Ranch dressing, YUM.] and we ordered the Thursday special, The Chimichanga [stuffed with black beans, rice, sweet potato, soy chicken?\u00BF?] btw I heard soy chicken? And got a little scared, lol. Mind you, I'm not a tofu kinda gal, but I was feeling adventurous today! \n\nBuffalo Cauliflower wings came out, roasted and drenched in buffalo sauce and yummmmyy! OMG, I want to eat this all the time. The ranch is house made and is delicious. The Chimichanga (which my bro and I split and Ashley was sweet enough to have the the cooks split it into two plates for us) it was A-mazing, packed with black beans, rice, sweet potato had a nice hint of sweetness in each bite and the soy chicken another OMG moment! I'm LOVING EVERY BITE AND IN AWWWEE because I didn't think I was going to LOVE it like I did. \n\nLet's not forget desert because my bro had to have the Warm Apple Cobbler [Streusel, freshly baked apples, topped with Vanilla Ice Cream and Caramel] FYI this is not your grandmas Apple Cobbler crust and all that sugary stuff, lol. I would say more of a deconstructed Apple Cobbler. Apples layered in a cute mini cast iron skillet with caramel, streusel crumbled all over and top with vanilla ice cream. \n\nI enjoyed my first time here and I will definitely be back to try more!
