Where else can you get an Appetizer, Entree, Dessert, Bread, and Beverage for $6.95? Prepared by culinary students and served by restaurant management students, Russell's is a steal! That is, if you have about an hour and a half to kill. Russell's is a "Lab", where students get a chance to practice serving meals to the public, at cost. It's a win-win arrangement because the students learn-by-doing, and the public benefits with a tasty, cheap meal. The menu changes daily...when I went yesterday with a couple friends, we had the Olympia Oyster Soup with Fresh Tarragon, Chives and Smoked Bacon (very good and very oyster-y flavor), Wild Mushroom Soup with Black Truffle Cream (flavor was great, but the texture would've been better if they left the blender on a little longer), Dungeness Crab Salad (yummy), Grilled Fillet of Wild Salmon with a Horseradish Buerre Blanc and served with Thai Black Rice and an Asian Vegetable Stir-fry (overcooked), Baked Almond Crusted Idaho Springs Rainbow Trout with Lemon-Parsley Butter served with Quinoa Pilaf and Tomato Petals (pretty good), Herb Crusted Colorado Rack of Lamb with a Rosemary Jus, Fresh Asparagus and Twice Baked Potatoes with Tillamook Cheddar (Yummy!), Oregon Chocolate Hazelnut Cake with house- made Coffee Ice Cream (cake was too dry, ice cream was great), and Washington Apple-Walnut Crisp with Vanilla Bean Ice Cream (Good, but could've used a pinch of salt to enhance the flavor and sweetness). Service was slow, but these are students who probably have never done this before. This was their first week, and they will be open to the public for the next 7 weeks. This semester, they are serving lunch on Tues, Wed, Thurs, and dinner on Thurs. I will definitely be back when I have a couple hours to spare!
