I stumbled upon Sushi Roku on the 3rd floor of Caesar's Palace. This place has a cool décor and an amazing view of the strip from the dining area. I wasn't too hungry when I stopped by, I just grabbed 1 roll, the Katana Roll. It was a solid but pricey choice. Actually it was quite delicious but no better than sushi I could get back at home for half the price. Still you don't go out in Vegas for value eating.
