The tapas were all excellent though the service was a bit unpolished. Dishes were dropped at the table without the runner announcing what the dish was, the table wasn't crumbed or resilvered between tapas & paella, server was brusque, etc. The real issue came about when the paella was delivered to the table with just a tiny bit of crust around the outside. It was too soft throughout the dish even though I had ordered it to have a crispy bottom (socorrat). I reported this to my server as he checked on the table and he interrupted me, saying he'd send the manager. The server returned to the table after a few minutes and abruptly said the paella is as crispy as it gets. I informed him that this isn't true as I'd had crispier paella Valencianas in this very dining room before. I requested that he send the manager as he had said he would earlier. The manager was argumentative, rude, and not at all genuine. He left the table and then returned with the check laughing. I asked to speak to his manager. After that, the GM came to the table. He introduced himself, shook my hand, and then immediately began talking. He wasn't interested in listening to me or my concerns. He stood with his arms crossed and his foot out. Much like the manager, he was rude, argumentative, not genuine, and disinterested in my concerns. Previously, I have always really enjoyed Julian Serrano and am in disbelief that anyone would act as poorly as these two managers did.
