My husband is a Pho addict so about once a month I put on my sweet wife hat and we get pho. We used to live in Henderson and loved Pho Saigon 8, but now that we live on the other side of town we decided to try their Spring Mountain location. The decor is identical to the Henderson location, but the food is not nearly as good. The dining area is huge and the wait staff were friendly and even played peek-a-boo with our little one. We ordered the egg rolls and we both decided on grilled pork vermicelli. The egg rolls were OK, but the vinegar sauce on the side was lacking in flavor. The vermicelli was a biggest disappointment of the night. The pork didn't have the usual rich grilled flavor and the vegetables looked wilted and old. I didn't touch the lettuce and scooted the limp carrots to the side of my bowl. The noodles seemed old and were cold and lifeless. The flavors were muddled, not the bright and vibrant dish I was hoping to receive. We also shared a thai tea which tasted off too. I took a couple of sips and decided I was done. We definitely won't be back to this location.
