14 course tasting. beware the bread guy!! we got so full from the stupid bread.
service is impeccable. everything is perfectly prepared.
they don't serve the pig bladder anymore. exec chef comes out to prepare a seared salmon dish on dry ice, and he was so pleasant explaining everything to us.
despite this being an uppity restaurant, everyone was so friendly.
tips: maybe just stick to the smaller tasting menu and avoid the bread.
there's even a champagne guy for recs to start off your meal!
there is this pea dish with caviar: excellent combination of all flavors and senses: salty briny from the caviar, cold creamy and sweet from the peas, crispy from the toasts, chewy from the sponge cakes.
there is an amazing cheese cart that i'd love to run away with.
