I called the pro shop prior to our recent (February 2016) trip to Las Vegas, and the gentleman I spoke to recommended the Sun Mountain course for newcomers. It's definitely high desert golf, with green fairways surrounded by pebbly waste areas along most of the course. The staff was very friendly, loading our clubs on carts and staging them for the driving range. We started a bit late, because there's no signage about how to get to the first hole from the practice area. We experienced a bit of jockeying during the course of play, when a twosome passed us by in the middle of a hole; later, we let a foursome pass us at the turn which seemed to smooth out the rest of the round. The wind became an increasing problem throughout the round; it almost seemed to be in our face on every hole, although there were clearly some holes where it helped. I do think the wind kept us from fully enjoying the course - but the views from some holes were spectacular.
One issue that might just be an off-season problem - the gentleman I spoke to recommended that we start our day in the restaurant, which we chose not to do. It appeared to me that the restaurant was only open for breakfast on weekends; since we played on Monday, that could have been a real problem, since there's nothing around for miles if we'd gone out there only to find out that the restaurant was closed.
