This 5 STAR review of Cut @ the Palazzo is very long overdue. We were there on May 30th this year for my wife's birthday & had an absolutely amazing dining experience here. First our our server James & his assistant Eryn were outstanding. I can't begin to tell you what a professional & courteous help they were. We had the Japanese Waygu beef & it was out of this world. You must try it, it's pricey, but well worth it. After our meal we asked James if we could tour the kitchen & he very kindly agreed without hesitation. We went in the back of the house & were very impressed. We met with the Exec Chef Matt Hurley, Mike & AJ the Sous Chef, & even the pastry chef Amanda Lucero.......each & every one of them went out of there way to ensure our experience was great. I thank you all for this amazing night & truly do apologize for the delay in this review, but better late than never.
