Janice Beaton has any type of cheese you're after. They've got everything from 8-year-old cheddar to apple-smoked cheddar to crazy cheeses I can't pronounce from places like France, Switzerland and Quebec. They even had some type of white cheese covered in black mold which the guy told me is quite popular. I didn't try that one, but they do let you sample their wares before deciding on what cheese you want. The staff are real cheese-heads and know their stuff. Although they're always friendly and helpful, they don't have that underwater cheese I've heard about. The one where the guy drops a cheese wheel off a boat into the ocean for a few years and then comes and gets it and it tastes like the best cheese you've ever had. The guy at Janice Beaton tells me it's hard to get the food inspectors to give it approval because they need to see it as it ages in different stages. But I bet if you had the money, they'd probably be able to put you in touch with the water-cheese man. But other than that, these guys have everything you're looking for.
