I've been to the 4 or 5 ramen joints on Spring Mountain and I've found my favorite with Tatsu. There's a great selection of bowls: Shoyu, Shio, Miso, Tonkotsu, Curry, and others. When there's a wide selection like this, I find usually there is a loss in quality - as if having only two or three bowls like other ramen spots allows them to output great flavor in a speedy service. At Tatsu, you get the complete package: quick service and high quality flavor in each bowl; each distinct and unique from the next. By now, I've tried them all (they now also have customizable options for additional ingredients). Over the months that I've been coming in here, I've noticed I'm not the only one that prefers Tatsu. Business is doing well - more tables have been set in place, two flat screens were installed, and the menu has expanded. This summer, they introduced Cold Ramen - a different delicious take on ramen for a hot day - and also Tsukemen which has thicker noodles with a dipping sauce of a hint of fish flavor. I keep coming back because it's the best and the entire menu is top notch. I wouldn't be surprised if this hidden gem gets more and more popular in the near future.
