I'm not sure why this place is called the oyster bar because the oysters are definitely not the highlight at this restaurant. They serve one type, which were bland and just ok. My advice ... Skip the oysters and save your appetite for the soups. Because their soups are SO SO good! I understand why people will wait -sometimes up to 3 hours - for their favorite dish. I had the combo pan roast, which consisted of lots of crab meat, shrimp, and large chunks of lobster. The soup base was one of the best tomato bisque soups I've had. It's served with a scoop of rice and sourdough bread. I had a spicy level 5 which was perfect. I tasted the gumbo, which hubby ordered. Different flavor profile from mine, but packed with a lot of strong flavors. He ate it all up and said he would order it again. My friend had the bouillabaisse, which I loved, except she ordered a spicy level 8 which I couldn't handle. She even regretted it too, saying the temperature heat and spicy heat was more than she is typically use to. My advice for this place: (1) come at least 2 hours before prime lunch or dinner times start. Your wait might only be an hour - an hour and one half (I arrived at10:30am, and was seated at 11:45am); (2) try not to come with a large group (4-5 max) because with only a few seats at the bar, it will take a while for a large group to be seated; (3) be careful not to order your soups with more than a level 5 spice (they use red cracked pepper and habeneros as their spices), and (4) don't waste your time or money on their oysters. Overall great food and service. I'll be back next time I'm in Vegas!
