With Prime's level of snobbery, you'd at least think the chef would season the steaks before cooking... If you're looking for a standard steakhouse menu set in the palace of Versailles, then Prime is probably for you. Highlights: The menu is pretty standard fare but it's got all of the staples - steaks, potatoes, French onion soup, shrimp cocktail, creamed spinach etc. The quality of ingredients is very good and the potato dauphinoise were a very tasty side dish option. The wine list is pretty expansive as well. Low lights: Prime's ambiance is extremely stuffy. The waitstaff does little in the way of making you feel at home and we found our server to be very impatient and overbearing. The ornate setting doesn't really compliment the menu properly, however the panoramic windows in the dining room provide a nice view of the Bellagio's water show. None of our steaks had been seasoned before cooking which is practically a cardinal sin. How would any chef hope to create the perfect crust and flavor profile without a generous helping of salt and black pepper? Seriously disappointing... If you're staying at the Bellagio and looking for a steak dinner, Prime is a convenient option. Otherwise, go to the absolutely fantastic Carnevino at the Palazzo.
