Top bowl - D03 fried noodle Bottom bowl - E03 beef shank noodle in soup It was my first time trying this place and I have to say that I quite enjoyed it. I opted for a non-spicy soup base and was pleasantly surprised that the broth wasn't too bland as most places seem to have this problem. The broth was light but had just enough flavour while the noodles were a nice, chewy, and bouncy texture. In my opinion, the portion was just right - not too much/not too less noodles. The fried noodle was flavourful due to the sauce, beef bits and pickled vegetables. However, it did get a little heavy/salty near the end but overall it was an enjoyable dish. It also comes with a little cart of toppings/sauces that you can add yourself. For instance, cucumbers, crushed peanuts, green onions, cilantro etc. - pretty cool concept. Customer service was great. The servers were attentive and would consistently refill my water without being asked. They will also advise and make sure you're okay with certain ingredients in the dishes that you order. I'd definitely come back to try their crossing the bridge noodles.
