Great looking food made to order and a robust menu. The Shrimp and Grits and Pork Belly taco looked especially delicious. Unfortunately I would never find out due to a 90-minute wait and cancelling my order for a refund. This is not an exaggeration as I started timing them after 39-minutes. Standard service time in a restaurant is 20-minutes so this was 4.5x longer. Literally. Many of the folks around me were also complaining as they waited in the 82-degree sun with no shade for food. Their challenge is that they have a long menu of 12 complex food items plus a special. Moreover it was made to order. That means that ingredients aren't prepared until they're ordered which is a bad idea with such a menu in the middle of a busy event. The sensible thing to do would be to self-edit and focus on five items (veggie, pork, beef, seafood, special) that can be done very well. They plainly bit off more than they could handle and customers did not look happy when they go their food. On the plus side it was very fresh.
Additional challenges were poor staff that were not informed of and/or failed to set expectations with order turnaround. In addition they were rude when asked about updates on service. An ironic side effect as they dealt with unhappy customers and the shadeless heat of the day. The only saving grace was that I was taking bites of my friends meals from other food trucks which kept me from passing out. The wait times also spoiled a key ingredient of food which is the social aspect. My friends ended up leaving because they finished their meals and got tired of waiting with me in the heat. Im summary I'd avoid this truck on a lunch hour. Weekend and after hour service would be at your own risk given what I observed, in comparison to other trucks, and my conversation with others at a food truck fair.
