If Costco and your favorite butcher had a child together, it would be UW Provisions. It's for the wholesaler but also non-bulk consumer-friendly. It's a great secret in Middleton.
BEEF: One of the best selections of frozen and fresh meat that I've seen in town. There's a drop freezer with items from sausages to single packed steaks to grass fed burger patties and even things like liver and oxtail. Right next to you, there's an endless cooler of bulk packed meat products. They have a nice selection of summer sausages, bulk beef sticks (pieces and ends for $3.99/lb), and jerky. Across the aisle where they have their big green egg display, there's a huge selection of fresh beef - from beef ribs to PSMO to all the steaks you could dream of. Quality is fine, not exceptional.
OTHER MEAT (and fish): They have a nice variety of chicken - large boxes of cuts or even nuggets. They have frozen goose and other game birds. They also have a decent frozen fish selection.
There's a wine shop in back. They have frozen soups. They have smoking equipment and supplies. Bacon, bacon, bacon.
The best part is the prices - they are great to begin with, and there are a million specials going on.
