Apparently this little oyster bar inside Palace Station (about 15 minutes from Venetian) is always packed with a 2 hour wait, but we went at 1am on a Friday early morning and no line! Though we had to wait for ten minutes or so because the seats we were destined for were still occupied. We got seated and immediately I loved the vibe of the servers. Super friendly and welcoming, even at 1am in the morning! I wasn't feeling super hungry, so I shared the pan roast with a dozen oysters between me and another friend. The chef was fun to chat with during the meal and they cook it all right in front of you! The pan roasts were very interestingly cooked - I can't really explain it but you can see in my photos or try it out for yourself! The oysters were alright - still a bit sandy and fishy tasting, but with the hot sauce and lemon, it helped! The pan roast is a very generous portion for around $20. The dish even has spice levels! My friends opted in for 3 and 4 levels out of 10. 4 was the perfect kick for me, since I'm not much of a spicy person, but 3 was perfect for those that don't do spicy at all. There were a lot of shrimps in the pan roast, but the rice that came with it pairs perfectly with the flavor. I definitely want to return! I will be back Oyster Bar!
