This is one of my favorite restaurants of all time. I had previously been to the location in Beverly Hills and it was the same quality food. We ordered the cheapest bottle of red wine which was probably a mistake, we aren't big wine drinkers but like the "ceremony" of ordering a bottle of wine. They lit a candle just for this process so they could see. They primed the glasses and then decanted the wine. It was good but needed a lot of time to breathe. We started with the burrata prosciutto melon and the pork belly appetizers. The pork belly was understandably fatty but extremely flavorful and crisp. The burrata prosciutto melon was a classic flavor combination but the herb and sea salt made it over the top in flavor! For the steak we ordered Nebraska corn fed New York cut served medium. The crust on the outside form the style of cooking was amazing. We got the kale spinach and fries. The mustard dipping flight they brought out was a delightful pairing for the steak and fries. Finally we finished with coffee for dessert. The coffee was fantastic and extremely smooth! It is a specific Wolfgang puck roast. If you find yourself in Vegas with a little over $100 to spend on a meal absolutely go to Cut! Well worth the money if you appreciate good food.
