Raos is a landmark restaurant. Operationally they are able to consistently make multiple signature dishes which they publicly disclose the recipes yet nobody is able to duplicate. Lemon chicken: this is my favorite and I think the best chicken i ever had in any restaurant regardless of price. You get the crunchy crispy outside contrasting with a tender juicy inside of both breast meat and thigh meat. Each order uses Half a chicken. Their chicken is bigger then a Cornish game hen but much smaller than a supermarket chicken. The small size allows for fast cooking to the inside to the bone without raw pink spots near the bone and still maintaining the crispy outside without burning. Almost impossible to replicate at home consistently. You have to control the grilling temperature with the size of the meat. The sauce is not sweet. Tangy. They don't use sugar as a short cut to carmelization. When served you can smell the vinegar evaporating. As the dish ages the tangy flavor changes to the subtle tartness of aging lemon. Very delicate. You have to experience this. The lemon chicken in the first minute is different than what it evolves to 10 minutes later. No fat. Not greasy. The big supermarket chickens are higher in cholesterol. Completely different texture and flavor
