Made last minute reservations for a party of 4 thru Opentable. Located in the Aria, our table wasn't ready upon arrival, but we were seated within 5 minutes. Stepping into a Vegas restaurant inside the hotels is always such a surprise; is it going to be bright or dim, loud or quiet, packed or sparse of people. Sage? A pleasant surprise! Dim, quieter than expected, tables well spaced and just the right amount of people. Concept? Food concept is Farm to Table; different than other Vegas restaurants. The menu offers 4 options: a chef's tasting menu, or from the regular menu, you can pick 2, 3 or 4 courses. BUT, there are only 2 groupings of food, starters & entrees. And if looking for a Salad? Only 1 Kale option. Hmmm. Our group took a longer amount of time to make our choices. Each dish was so varied with flavors that it was difficult to look for a pairing that the tastes would blend (they should make suggestions). We decided as a group to share, so that we could try a little of everything. Everyone opted for 2 courses ($69). Food? Roasted Pear-blue cheese mousse, glazed bacon, walnut butter. I wasn't a fan. Alaskan King Crab-sunchokes, grapefruit, belgian endive. Unmemorable. Foie Gras Brulee-huckleberry compote, toasted cocoa nib, toasted brioche. Interesting taste combination and Very Good. Wagyu Beef Tartare-crushed caper aioli, slow poached egg, crispy chocolate. Of the starters, this was the STAR. Delicious. Everyone at the table was a fan. Highly recommend. Columbia River Sturgeon-cauliflower emulsion, baby spinach, capers. Good. Grilled Skirt Steak-charred brassicas, seasame, miso soubise. Very Good. Prepared just right and flavorful. Truffle Risotto (Special)-THIS IS A MUST. EVERYONE LOVED. We wish there was more. They have quite a selection of Absinthes, but our group opted for coffee. A very pleasant dining experience and great place to talk.
