I am a pizza snob, and have tried it all. So, I was surprised that one of the best pizzas that I have ever had, was at Project Pie, which at first look seemed like the Chipotle of pizza. But, their pizza was great. At my fault (misunderstanding a menu item) the cook offered to remake a pizza. I told him no, edit the pizza but don't toss it because I misunderstood. It was great. I loved the cornmeal crunch of the crust, and If they can do that well with a mistake, I wonder what they can do with a regular order. The best pizza in Vegas is hidden away in the underground of a casino, but find it, and it is amazing.
