If you like Hotpot then get thee to Chubby Cattle! We went for lunch on Dec 26th as they were open from 12-3pm that day.They have a great selection of broths to choose from and a wide array of yummy goodness ( and sometimes weirdness) to simmer. I prefer beef, tendon and veggies over pork blood and duck flipper, but hey, there's something for everyone! The coolest part is that you can sit at the bar in front of a refrigerated covered conveyor belt and grab things as you see/want them. They keep track of your consumption by the color-coded plates.
I really enjoyed the food! We were desperate to return but were dismayed that they only seemed to open at 5pm everyday. We were confused as we had been there at 2pm the day before. In any case, it's a fantastic experience and worth getting away from the Strip for!
