I've been trying to track down this truck for at least a couple of years and I finally got my chance! Their 'special of the day' was the steak and shrimp hibachi fries with yum yum sauce. In addition to having loaded fries, they keep tater tots (that are actually square shaped and not like your traditional tot), fries (traditional, cheese, and truffle varieties), and burgers regularly on the menu. The set up is just like any other food truck, order at the window (or on this day, orders were placed at the door) and food is called out and given to you. I placed three orders for myself and coworkers and the wait time was a little under 10 minutes. Not long at all. For dipping sauces, they have regular ketchup and sriracha ketchup which was actually delish. Nice balance of heat. Once back to the office, we all dug in. I was very delighted that the portion size was quite large and they did not skimp on the shrimp nor steak. I asked for the yum yum sauce on the side so that it would not drown all of the other ingredients. Besides the steak and shrimp, bok choy and scallions topped off the fries. The only thing that I felt was missing was some sort of spice/heat. It needed an extra little kick! My coworkers were a little disappointed in the tater tots because they felt they were more like breakfast potatoes rather than a normal tot. Personally, I thought they were delicious and would be good for any meal. I will definitely be back to What the Fries when they next show up around my job's business park!
