Mitchell's currently has a flavor called Caramelized Chocolate. It's super-dark, super-rich, and salty. The first time I tried it, it was SO GOOD I must have blacked out. I woke up with the sun, lying behind some bushes in a melted pool of ice cream. And I lapped it up off the ground. It's that good.
They have tons of amazing flavors, including a number with sea salt (my favorite) and some pure-fruit vegan/healthy options. Waffle cones are home-made, and salty pretzel sticks are given out free on request. The self-serve water station is a nice touch.
Now they have coconut-based vegan ice cream, so that's what I'll be getting! I don't personally like the taste of coconut that much, but after about two bites I'm not noticing that part of the flavor anymore. Both of the vegan ice creams are great!
I favor the sundaes: great sauces and toppings, including real cherries made from non-plastic.
The staff seems to average about 7 years old, and they are a well-oiled machine. When the place is packed and a million customers are barking custom orders, they get every one done quickly, correctly, and with a smile. It looks like a really hard job back there, and they act like it's easy. This is a consistent pattern for years, and whenever I get bad service someplace else I remember: if the kids at Mitchell's can be that efficient and stay in a good mood, there's no excuse!
(I do have doubts about their recycling bin: it's a great idea to recycle the spoons and cups, but it's not well marked, so it ends up full of trash. I doubt anything gets recycled.)
They're open late (11pm), they have lots of seating indoors and out, they give free samples to taste, they favor local ingredients when possible, and there's a motorized train that runs around the ceiling.
