  • The challenge is officially over! I thought it was good. I realized a few thing about myself. I used to eat a lot of processed foods and I actually love baked sweet potatoes, asparagus and zucchini. Who knew! I found it challenging at times because I needed to prepare meals further in advance and my family members who was forced along for the ride were supportive yet not overly excited about the meals. I purchased the two kitchen appliances that Samantha recommended and I have been really happy with them. I never actually got to the point where I felt like I had more energy which Nick, my CrossFit instructor, thinks is because I wasn't eating enough. I didn't lose a single pound until this morning. Yesterday was a celebration day for me after completing the challenge. I ended up eating a Pizza Hut pizza for lunch and a sandwich from a food truck for dinner while at an event last night, (don't judge me :)). Strangely, I lost 3 pounds by this morning. I was also happy to see that I dropped my time for the benchmark Diane from 4:08 to 3:13. While my mile run was 3-4 seconds longer, I felt pretty good and strong during it. I plan to continue watching what I eat and make this a lifestyle change vs just a 30-day challenge. Thanks Samantha!
