| - Wisconsin is known for cheese, so it was a no-brainer to stop by and browse at Fromagination. Located right on the square downtown, they have cases and cases of cheese, including plenty of local Wisconsin cheese. I can't eat as much cheese as I used to due to my lactose intolerance, but it was still fun to look. What's also good is they don't just have cheese, but also sandwiches and salads and other snacks, so picking up a sandwich allowed me to try a little bit of the cheese without going overboard.
We got the chile ancho chicken sandwich, which had roasted chicken breast with a poblano pesto spread, salad greens, and Wisconsin provolone cheese, and sat outside the shop to eat. (They had a whole section of tables and chairs outside, very comfortable.) The bread was soft and soaked up all the flavors of the pesto, the chicken was great, and you could definitely taste the provolone, which was so good and tied it all together. Very glad we stopped by Fromagination.
