Just going to put it out there, but the barista who was doing drinks this long weekend Saturday seemed really, really confused and it took her 15 minutes to make me two lattes. She kept on moving the milk around and looking down really confused at it. After tipping one of the cups and spilling all the contents on the counter, she made a new one and attempted coffee art. It was an uncomfortable experience, where I sort of smiled and nodded encouragingly. My recommendation for Balzac's would be to ensure your baristas have more training before you let them out on the floor. My friend and I arrived around 7:30 p.m., but can't imagine what the wait would have been like with the new barista when there was a crowd. The coffee here though is really good and if I am in the area I would still stop in again, as they have great tasting baked goods, and I'm sure she'll get the hang of being a barista eventually.
