  • This pizza is really close to being a Digiornio pizza just with better cheese. I ordered a medium, which they call an 8 cut...because they think number of slices somehow equals a size, which it doesn't. I don't understand why so many Pittsburgh pizza shops use this standard of listing the number of slices as the size when it doesn't mean anything and you can cut any size pizza into any amount of slices that you want. Chalk it up to yinzer IQ I guess. The crust of this pizza looks and tastes just like a frozen Digiornio crust. They cook the pie directly on the deck of the oven, which this time was VERY dirty and the bottom of my pizza ended up with a whole bunch of nasty burned black remains from other peoples pizza because the pizzaman was too lazy to just clean the oven as he used it. Despite cooking directly on the brick this pizza is far from crunchy. They use corn meal on the bottom of their pies which wouldn't be too bad if they weren't using way too much of it...so you end up with a dusty dirty pizza bottom in general. The pizza itself was way too thick and most of the dough did not cook at all. The top of the dough and the bottom of the pie both LOOKED to be cooked enough, but the taste would beg to dffer. The actual flavor of the dough is pretty good, I taste some decent yeasty fermented goodness with a fairly nice bready taste. If it were a better consistency and it weren't so ungodly thick than it may taste good. To my delight hey use a pretty healthy portion of sauce, unfortunately the sauce tastes obnoxious and cheap. It is pretty obvious they are using the lowest quality tomatoes they can get and then adding a ton of sugar and garlic powder to try to cover it up. The consistency is a medium thickness and slightly on the watery side, definitely no signs of actual chunks of tomatoes. It tastes like the kind of pizza sauce that you would expect from skating rink pizza. Once again the name Digiornio comes to mind. The cheese is a mid grade cheese, it melts fairly well but doesn't have all that much flavor. They are using a bit more of it than I would like but not so much that it ruins the pie. The cheese was applied somewhat lazily and a lot of it ended up in the middle of the pie as opposed to distributed across the whole pie. In general this is just another pretty bad pizza, mostly because of the sauce and doughy dough. I give it a 4 out of 10.
