| - While on business in the lovely white snow laden city of Madison, where the temp dipped to a lovely naught today...that's zero degrees Fahrenheit...I was craving a warm soup like substance that also had noodles in it...there was no other choice than but to search out some pho. And my God did Pho Nam come through.
Now when in an Asian persuasion place of gastronomics, one should always get a beer. But please...do not order Kirin or Asahi. These are made in St. Louis. One must get something more...well Asian. Tsingtao? Check. Happiness? Check.
I started with the minced pork eggrolls. These were crispy on the outside and lovingly chewy on the inside. Seasoned to perfection with an excellent proportion of veg to meat the flavor on these were intense. The dipping sauce was subtle and a little salty. Delicious. Of course, judicious application of their house made hoisin was also appreciated. 4 stars for these tube form crunch monsters.
The main event. The fillet and meatball pho. I read some reviews where the "did not have enough meat". I guess they just caught the place on an off night. Mine had 7-8 pieces of shredded fillet and 5-6 pieces of meatball. Not sure if I was just that cold or what, but it was perfectly temped and did not burn like Hades wild fire in the mouth. The broth was delicious, slightly salty, very savory, and a lovely clearish brown. The veggies in the pho were par soft with just a little crunch. The noodles were outstandingly prepared. Slightly past al-dente vermicelli provided epic slurpage as I made a mess load of noise slurping this stuff down. I put a little extra cilantro, jalapeno, and sprouts in along with a dash of the aforementioned hoisin and just a splash of Sriracha. Spicy, sweety, smoky noms ensued.
Now...when I say it was damn good, I come from a city where Pho is not taken lightly. And this was on par if not just a little more special considering the temp outside. Warmed me to the core and made the taste buds dance. Yes. 5 stars.
Service? Brief. But to the point. The food came relatively fast and all the servers had smiles on their face. So well done in this regard as well.
Did I mention I had Tsingtao beer(s)? There may or may not have been more than one placed on my table. I plead the 5th.
If you are in Madison, in the winter, with an absence of temperature outside, and need a damn fine noodle fix a la Pho style, you cannot go wrong here. Period.
