  • I'm a little sad to have just completed Fine Cooking I last night. I loved it! I have never taken a cooking class before but I have wanted to learn how to use the correct techniques for years. I'm a decent at-home cook with years of "Mom Cooking" but very little refined cooking experience . This class helped me gain so much confidence in my own kitchen because I had the opportunity to make soufflĂ©, reductions, use shallots for everything (who knew?), and learn basic knife skills. Yesterday, Andrew taught me how to chiffonade plus I made an aoili! I was thrilled! Andrew is an incredible teacher. He is knowledgeable and obviously very skilled as a chef, but he makes it all very accessible to the students. The tone of the classes are light and fun--never stuffy. I can't wait to take Fine Cooking II!
