| - There are a lot of mediocre french bistros in the world, but I had high hopes for Bouchon, given the pedigree of chef-owner Thomas Keller. I was not disappointed.
Mind you, this is not the nouvelle cuisine of Keller's The French Laundry in Napa Valley. Rather, this is a menu filled with classic french bistro food: onion soup, country pate', steak frites, sauteed loup de mare... you get the idea.
But oh, man. Bouchon hits this simple concept out of the park. If only the typical Paris bistro were this good.
Don't expect to be able to eat lightly here. Yes, there are salads and fish, but I dare you to get past the spectacular and pull-apart epi baguettes served hot from the oven. That fish is likely to be sauteed in butter, and that salad may have a poached egg on top.
So just give in for the evening. Order a glass from the overpriced wine list, start your evening with country pate' or the unique and wonderful rillettes of salmon (let the waiter remove the layer of clarified butter from the jar it's served in), and dive in. You only live once.
