Of the prodigious Japanese restaurants in this town, Osaka Japanese Bistro is one of my two favorites. (I reviewed the other one on Yelp with 5 stars, also). Osaka served me last night some fresh tuna poki salad that is too sublime to describe. Their tempura vegetables--zucchini, yam, and a red onion ring--were deep-fried with fresh oil, noticeable right away from the pale coloring of the breading and the way the taste of the vegetables were enhanced--not overpowered from previously used oil. (This is the mark of a 1st-tier sushi bar. 2nd-tier sushi bars in Japan actually purchased first-use oil from the top tier.) Traditional tekka maki along with a plethora of other sushi rolls all complemented each other to be washed down with Osaka's signature apple saketini.
I cannot stress enough the importance of wait staff in the dining experience. The fact that I was surprised at how surreptitiously my drink was refilled or how my bill just appeared out of thin air is testimony to the efficacy of front-of-house operations. (I should have expected their efficiency when I noticed our server using an electronic order pad with stylus to take our order!) Good staff do what they are told, and the staff here were well above that standard: they anticipated my wants.
If local Las Vegans want to experience dining excellence, they should look no further than Osaka Japanese Bistro.
