Omg!! Was I lucky to have a cancelled flight that resulted in my staying overnight in Charlotte! I needed to find breakfast and I found love! The flying biscuit was a vegetarian dream for breakfast! The place was packed, though. It was bright and colorful and the tables are arranged to get the most out of the space so don't try to take a really big group there because you'll need to wait. I ordered the pancake of the day; had nuts and bananas, along with the tofu scramble, creamy grits and of course a fluffy biscuit with a side of apple butter! I was so upset I was on a time crunch and didn't have time to eat everything but baby... it was all so good! The grits were thick enough to hold on your spoon and creamy and rich. The tofu scramble had fresh peppers and onions and some kind of seasoning or marinade that tied it all together, perfectly! The biscuit?? The biscuit was about four or five inches high! The apple butter was the perfect condiment for it, too! How did they know?? I barely finished the pancake, as it was as big as the plate it came on! I have no friends or family in Charlotte, so I don't know when I'll be back, but whenever I am fortunate enough to be near this place, I plan to fill up, Flying Biscuit style!
