My fiance and I just moved to the Elizabeth area and were looking for a good sushi place near our new neighborhood. Seeing the Ginbu was offering a groupon, we decided to buy it... I mean, what have you really got to lose.
We have since been back to Ginbu 3 or 4 times. They have great, fresh sushi and the service is quick. I love that we can get good food and be in and out. Ginbu is a small restaurant with a tight parking lot, so be prepared to park on the street if they're busy.
Their prices are very reasonable compared to other sushi establishments in Charlotte. I have not tried anything off the menu other than sushi and salad. I am a big fan of ginger dressing, but I must admit that Ginbu's ginger was not my favorite. It was a little creamier than I was expecting, but I would order the salad again.
I have seen a lot of reviews about the less-than-awesome service. I've never had bad service there; I've also never had outstanding service. It's just kind of meh, which is surprising for a smaller, more intimate setting. Nonetheless, I will continue to go to Ginbu because it's delicious and conveniently located.
