I would have rated this two stars if it wasn't for Chef Richard. First off, I find that their buffet is overpriced for what you get. Yes, they boast their vegan options but honestly, there is nothing special about them. I'm just glad that I can have a couple of vegan desserts instead of the typical fruits and sorbet (they didn't even have sorbet). Some of the food visually looks upscale but the taste wasn't upscale enough. The selection is so-so, especially for brunch. Dinner seems to have an improved selection but I've seen better. Chef Richard was very kind to take his time to give me a walk through to all the different vegan dishes. He even told me that I can have some dishes custom made for a vegan diet since Wynn is KNOWN for vegan dining. I had a couple of custom dishes and I didn't even come past 4 bites. Overall, maybe if you are not vegan, you may appreciate it more that I did. I actually came with a couple of non-vegans and they were not blown away with the food. I think that they can do SO much better.
