The thing about the high-end restaurants in Las Vegas is that so many of them are offshoots of famous restaurants in New York City, San Francisco, Los Angeles, or Miami Beach. I skip most of them on my trips to Vegas because I can go to the exact same restaurant in New York City (or San Francisco or Miami Beach or LA).
Blossom is a restaurant that you will find only in Las Vegas. Prior to my first time at Blossom about half a decade ago, I would never have thought that I would travel to Vegas to dine at a Chinese restaurant. The Hong Kong style black pepper goose liver appetizer at Blossom has forever changed my views about the use of offal in Chinese cuisine. It's unlike anything else I've found anywhere else in the US. The best way I can describe it is foie gras with a delightful black pepper kick. I will sometimes get 3 servings of this phenomenal appetizer as my main dish.
Another unique appetizer that Blossom used to offer was the seafood medallions. This was like the lovechild of shrimp toast and crab rangoon. Much to my dismay, this menu item was discontinued a few years ago.
Service is very courteous and attentive, and prices are reasonable, given the excellent quality of the food and service.
